
Coffee crepe and ooyoo whipped cream - breakfast, brunch, dessert recipe

We love lots of toppings on our desserts - if this describes you too, try this crepe recipe!
Crepe ingredients:
1 egg
a pinch of salt
1/4 tsp of instant coffee powder
1/4 of vanilla extract
120ml milk
1/3 cup of all purpose flour
10g melted butter or vegetable oil
Fruit (bananas, strawberries, blueberries, etc)
Earl grey ooyoo whipped cream ingredients:
100g heavy cream
1 Tables of ooyoo
Sugar to taste
Coffee crepe instructions:
Mix egg, salt, coffee powder, vanilla extract, milk in a bowl
Sift the flour and mix with batter and melted butter/oil
Let it rest for 30 mins to 1 hour
Add a little bit of oil on the pan and heat it up on low-medium heat
Pour 1/4 ~ 1/2 cup of batter (depending on your pan size) on the pan and gently cook until surface is dry (usually less than a minute)
Gently flip it over and cook 20 to 30 seconds and done!
Ooyoo whipped cream instructions:
Whip cold heavy cream until just foamy/frothy (about 30% to stiff peaks)
Add ooyoo to cream, then whip it well until stiff peaks form (if you like a stronger earl grey flavor, add more ooyoo)
Add sugar to taste if it's not sweet enough

Pipe or dollop whipped cream on your coffee crepe and add any fruit or toppings you like. You can also set aside half the whipped cream without adding ooyoo, to offer a two-tone appearance to your crepe if you want to be more artistic!
We really liked this flavor profile - rich coffee flavor in the crepe and deep elegant earl grey flavor from the ooyoo whipped cream.
